Hazard Lights for the Kitchen

Fave recipes. Oh my.

Now, I’m not known for my culinary skills. I’m happy when I can make it through chopping veggies without bloodshed.

I kid you not.

I’d have to say my fave thing right now is Southwestern Pizza. It’s something we found on the web.

You get a whole wheat crust, dump a cup of salsa (I like medium) and spread that around (Yep, NO pizza sauce!). Sprinkle on about a cup of mozzarella cheese. Sprinkle about a cup of rinsed off black beans. Cut up a couple of red peppers, and a couple of scallions and toss it all on there, then top off with 1/4 cup mozzarella cheese.

Bake that bad bear for about 10 minutes at 450 degrees and you’re set. I use one of those Pampered Chef pizza stones…they rock for crispy crusts.

Oh. My. Gosh. It’s yummo. And it’s got a little kick to it, too. I like to dip mine in ranch, too.

Just be careful opening the can of beans. **shakes head** those lids are SHARP!
